My friend recently went to Atlanta on a trip, and she instagrammed a place that served “Totchos”. I had never heard of this delightful treat.
It was so cute that I had to come up with a “Totcho Tuesday” recipe that is healthy and will make you happy all in one!
- Cauliflower Tater Tots
- 2 ½ cups rotisserie chicken boneless and shredded
- dash of pepper
- ¾ cup buffalo sauce
- 1/2 to 3/4 cup of salsa
- 1/2 cup of red onion diced
- 1/2 cup of green pepper diced
Topping
- 6 strips bacon, cooked and diced
- ¼ cup Primal Ranch Dressing
- 1 package of wholly Guacamole or 1 cup of homemade guacamole
Directions:
- Preheat oven to 400°F
- In a 9 x 13 casserole dish combine chicken, onion, pepper, and green pepper. pour over buffalo sauce is well coated. Then pour over the salsa. Top with Cauliflower Tots.
- Pour over the cheese sauce .. (you can also use Daiya Vegan Cheddar Cheese or Raw Grass-fed Cheddar Cheese)
- Spread the guacamole over the tater tots with a rubber scrapper. Top with Bacon bits. Last sprinkle over the ranch dressing on top.
- Place in the oven and bake for 20 -25 minutes or until tater tots are lightly browned.
