This recipe tastes amazing and is so good for dinner and lunch the next day! You can always buy the pre made zoodles and use a rotisserie chicken!
Ingredients:
2 large chicken breast cubed
3/4 cup Franks Hot Sauce
2 tbsp coconut oil (divided)
1 avocado diced
2 – 3 Tablespoons of Just or Primal Ranch
1 garlic clove minced
2 large zucchinis spiralized
1/4 cup of halved cherry tomatoes
diced red onion to taste
1/2 tsp salt
1/2 tsp pepper
3 tsp almond flour
Directions:

Heat a skillet with 1 tbsp of coconut oil over medium heat. Add the diced chicken breasts along with the onion and garlic to the skillet. Allow to brown and cook on each side 6 mins. Once the chicken is completely cooked, remove from the skillet.

Remove the chicken breast. In the skillet add the Franks Hot Sauce, coconut oil, salt and pepper. Slowly whisk in the flour and stir. (if it’s too thick you can add a splash of water).

Add zucchini noodles to the sauce and chicken and simmer on for 5-7 minutes.

Transfer to a bowl and top with the ranch, tomatoes, and avocado.Enjoy!
