I absolutely LOVE cauliflower. This is the perfect soup season so why not combine the two to make the perfect Fall Treat!
It will taste great left over too!
Ingredients:
1 large head of cauliflower steamed and chopped. ( you can do 2 frozen bags steamed as well)
2-3 cups of vegetable broth (2 if you chunky soup, 3 if you like it more creamy)
3 cloves of garlic
2 tablespoons of tahini
1 tablespoon of curry
3 tablespoons of grass-fed butter or ghee
Toppings:
Bacon
Green onions, chopped
Parmesan Cheese
Dalya Cheddar Cheese
Directions:
First Steam the cauliflower. I put mine in a microwave save dish and placed on medium high for 8 -10 minutes (until it is soft).
In a large pot place the cauliflower and mash it into fine pieces. If you want it completely softened then place in a food processor.
Next, add vegetable broth, butter/ghee, tahini, garlic, curry, and stir. Heat on medium for 20 minutes or until slightly bowling. Turn heat to low and continue to cook for another 20 minutes.
Place in a bowl and top with any of the toppings list above.
