Since “Meal Prep” is the theme of the week .. I thought I would make my first recipe a great one to add to your meal prep menu. This is easy, tasty, and will give you lunches or dinners for up to 4 or 5 days!
Ingredients
2 tablespoons olive oil
2 chicken breast, boneless and skinless
Salt, to taste
Pepper, to taste
2 cloves of garlic
1/2 pound green beans
1/2 pound of broccoli
2 cups cherry tomatoes, halved
½ cup basil pesto
1. In a large pan, heat olive oil slice chicken into strips and add to the pan. Season with garlic, salt and pepper. When the chicken is completely cooked through, remove from pan, and set aside.
2. Add green beans and broccoli; cook until tender. Return the chicken strips to the pan, then add tomatoes and pesto. Stir until fully incorporated.
3. Serve or place into 4 food storage containers and store in the refrigerator. You can eat it for up to 4 days .
