This is a wonderful festive recipe during this Holiday season …It has a lot of flavor and will leave you and your guests wanting more!
Ingredients:
2.5 lbs Pork Chops(around 4 to 6 pieces)
3 -4 cups of quartered red potatoes
1 tablespoon of fresh thyme
1/4 cup fresh cranberries (or unsweetened frozen)
1 tbsp each maple syrup and balsamic vinegar combined
FOR THE MARINADE
1/3 cup cranberries
2 tbsp melted coconut oil
2 tbsp Grade A or B maple syrup
1/4 cup balsamic vinegar
1/4 tsp black peppers
2 garlic cloves
Directions:
- Place Pork chops in a roasting or baking dish. Set aside.
- Next mix marinade together in a medium bowl.
- Blend all the ingredients listed in the Marinade in a food processor or blender until liquified and smooth.
- Pour this over the pork chops, coating evenly.
- Cover and place in fridge to marinade for 30 minutes or you can leave it for 24 hours.
- preheat oven to 400 F.
- Remove pork from the fridge
- Add your extra cranberries and thyme to the dish. Spread it out evenly on and around the pork chops.
- Bake for 23-25 minutes.
- Remove from oven and coat the pork with the maple syrup/balsamic vinegar mix.
- Broil for about 3-5 minutes or until lightly browned crispy and cooked evenly throughout.
- Remove from oven and serve.
