This is a unique delicious recipe that is perfect to kick you into the Spring Spirit.
What goes better with Pork?
Well Pineapple of course!
Try this one on for size, you won’t be disappointed!
Ingredients:
3 lb. pork shoulder
dash of salt
1/2 tsp black pepper
1 fresh pineapple, peeled, and cut into 1/2 inch pieces
1/2 cup onion, diced
3 slices of bacon, chopped
1/4 c tamari or coconut aminos
1/4 c of gluten free Thai Peanut Sauce
3 garlic cloves, minced
1/2 cup coconut milk
1 TBSP of coconut oil (melted)
Corn Tortillas
Toppings:
Avocado slices
Cilantro
Directions:
Pour a tablespoon of melted coconut oil in your crockpot.
Place the pork shoulder and bacon pieces in the crockpot.
Pour the tamari, coconut milk, and thai peanut sauce over the meat.
Next Season with the spices and then top with pineapple.
Cook on LOW for 6-8 hours.
Shred meat with a fork and serve over corn tortillas.
