I am always trying to create new innovative ways for people to eat lunch without having to eat the bread, so here is a great recipe to help with that cause.
These have amazing flavor, are very healthy, and you get the feeling you are eating a sandwich with all the good benefits.
Ingredients:
12 ounces boneless skinless chicken breasts, cut into strips
1 teaspoons lemon juice
1 tablespoon of olive oil
2 cloves of garlic
1/4 cup greek vinaigrette
4 romaine lettuce leaves chopped
1 tablespoon thinly sliced red onion
12 butter lettuce leaves
1/2 cucumber diced
1/2 cup of artichokes diced
1 avocado diced
1 tsp of dried tarragon
4 tomatoes, chopped
12 kalamata olives, pitted and chopped
1 teaspoon chopped parsley
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
Directions:
Preheat a medium sauce pan over medium – high heat. Place chicken with olive oil, garlic, red onion, lemon juice, and 1 teaspoon tarragon in sauce pan and cook until chicken is cooked entirely.
In a medium bowl combine tomatoes, cucumbers, avocados, and olives with the greek dressing and toss.
