This is a great recipe for these summer months. It is so tasty but it is not so hearty and heavy to really compliment those Summer Nights … It is also a great lunch on the go item too!
Ingredients:
1 rotisserie chicken deboned and shredded (Or 1 lb of shredded chicken)
2 avocados peeled and mashed
1 tsp of lime juice
1 package of gluten free tortillas
1 clove of garlic
1 tbsp of coconut oil or olive oil
romaine lettuce leaves chopped
1/2 cup of diced tomato
1 cup of daiya vegan cheese or raw cheddar
1/2 cup of chopped cooked bacon (*optional)
Directions:
- Place avocado and lime juice in a bowl. Mash until almost smooth (a few little chunks are ok).
- In a large skillet place coconut oil, chicken, bacon, and garlic and sauté on medium to medium low for 10 minutes.
- Place one tortilla on your surface. Spread Avocado on the bottom, place chicken mixture, and top with cheese, lettuce, tomato, and ranch to desired taste. Place in microwave for 30 -45 seconds to melt cheese.
- Roll up tortilla and slice into halts
