With the fall weather it’s time to get those crockpots out and make some yummy meals that can be frozen, used as lunch, and or eaten in one sitting.
I love this one, it brings the best of Italian comfort to healthy all in one!
Ingredients:
2 lbs pounds boneless skinless chicken breasts, thinly sliced
2 Tablespoons olive oil
1 cup coconut creamer or a can of full fat coconut milk
1 cup free range chicken broth
2-3 cloves of garlic
1 teaspoon italian seasoning
½ cup parmesan cheese (optional)
1 cup spinach chopped
½ cup sun dried tomatoes
1 can of diced tomatoes
Directions:
In a crockpot add olive oil, chicken, coconut creamer, chicken broth, garlic powder, italian seasoning, diced tomatoes, and parmesan cheese.
Heat on low for 8 hours, or medium for 4-6 hours.
Serve over diced potatoes for a little added treat.
