I love love love caesar salad, so when I found this great recipe I decided to make it my own and turn it into a Paleo delight!
I hope you love it as much as I do and did.
Ingredients:
1/3 cup of olive oil
2 cloves of garlic
3 anchovies diced (optional)
1 teaspoon Worcestershire
1/4 cup of red onion diced
6 oz of artichokes (diced)
1/4 cup of sun-dried tomatoes
1 1/2 lbs of Kale
2 teaspoons of fresh squeezed lemon juice
1 hardboiled egg sliced
1/4 cup of parmesan cheese (optional)
1 chicken grilled and diced
Directions
In a food processor combine 1/3 cup olive oil, 2 garlic cloves, 2 anchovies, 1 teaspoon Worcestershire sauce, and salt and pepper to taste a puree till mixed throughly.
Put rinsed Kale into a large bowl and add onion, artichokes, and sun-dried tomato. Toss 1 1/4 pounds chopped kale with the remaining dressing;
broil on a baking sheet, stirring, until crisp, 5 to 8 minutes.
Put the kale mixture in a bowl and top with lemon juice, grated parmesan, a chopped hard-boiled egg, and chicken (if desired).
With this recipe you can also sauté shrimp or steak as well and serve over the top of this salad..
