With the cold weather, nothing is more satisfying than a nice warm bowl of oatmeal. Here is a great recipe that combines the warmth and comfort of oatmeal with the Holiday Gingerbread Cheer!
Ingredients:
1/2 cup full-fat canned coconut milk
1/4 cup water
3 Tbs. coconut flour
2 Tbs. finely shredded unsweetened coconut
1 egg
1/2 of mashed banana
1/2 tsp cinnamon
1/2 tsp ginger
1 tsp molasses
2 tsp maple syrup
1 tsp vanilla extract
*top with raw walnuts as an option
Directions:
In a small saucepan, mix together the liquid, coconut flour and shredded coconut. Bring to a boil (mixture will be thick), cover, reduce heat to low, and simmer for 2-3 minutes.
Remove saucepan from heat, crack the egg into the saucepan and whisk quickly to prevent the egg from scrambling with the heat. Then, return to the heat and stir until thickened, about 2 minutes.
Add mashed banana and whisk again.
Cool
Enjoy!
