These are great summer snack for you and your children. For added deliciousness you can top the corn muffins with honey too!
Ingredients:
2/3 cup almond flour
1/2 cup butter (preferably grass-fed)
8 eggs
1/2 tsp salt
1/2 tsp baking powder
1 teaspoon of vanilla
Directions:
Preheat the oven to 400 degrees. Whisk together the almond flour, salt and baking powder. In another bowl, beat the eggs.
Whisk in the melted butter and add vanilla.
Add the almond flour mixture to the egg/butter mixture and stir to combine.
Pour into muffin tins a little over 1/2 way full. Bake for 25 minutes or until golden browned.
Take out of oven and let cool.
