Most of my clients use the excuse that they are in too big of rush to make eggs for breakfast, or to eat at all. I would like to say that it is poor planning, but regardless of the reason here is a recipe that not only takes less than 20 minutes to make, it is the perfect grab and go breakfast meal.
Eggs in Ham Cups
12 slices of ham (I use black forest ham from the deli section of your local grocery store)
12 eggs
2-3 cloves of garlic
salt and pepper to taste
1 avocado diced
1/2 cup of green onion chopped finely
2 teaspoons of unsweetened coconut milk or almond milk
Directions:
Preheat oven to 375 degrees. Then line a muffin tin with a piece of ham in each tin.
In a small bowl wisk 12 eggs, then add almond milk, salt and pepper, garlic, and green onion and continue to wisk until mixed thoroughly.
Pour egg mixture in muffin tins about 1/4 to 1/2 of each tin or until egg mixture is used completely and then top with diced avocado.
Bake for 20 minutes and let cool then serve.
I also freeze them and then microwave them for 1 to 2 minutes when I am in a rush in the morning.
