Who says you can’t have cheese on “Whole 30” .. Here is a delicious recipe that to be honest tastes better than real queso and beef. You will definitely want to add this to your list of favorite recipes.
Ingredients:
1 spaghetti squash quartered and shredded
1 tablespoon of coconut oil
1 – 2 lbs of ground beef (grass-fed)
1 can of enchilada sauce
1 cup of salsa
1/2 cup of diced green pepper
1/2 cup of diced red pepper
1/2 cup of diced orange pepper
3 cloves of garlic
1 tablespoon of creole seasoning
1 cup of avocado salsa
Cheese Sauce:
1/2 of a cooked and peeled sweet potato (hot)
3/4 cup of olive oil
1 tsp of lemon juice
1 tablespoon of chili powder
1 tsp of garlic
1 tsp of onion powder
1 egg
1/2 cup of full fat canned coconut milk
1 small package of nutritional yeast
1 tsp of cumin
Directions for meat:
In a large skillet place coconut oil over medium-high heat. Next add onion, peppers, and ground beef. Let me brown and then add garlic, creole seasoning, enchilada sauce, and salsa. Let cook over low to medium heat for 15 minutes.
Directions for Cheese:
In a large blender or food processor combine olive oil, egg, lemon juice, spices, sweet potato, coconut milk, and yeast. to the food processor or blender. Pulse or Blend it in until consistency is a smooth creamy sauce.
Now place meat over spaghetti squash and top with cheese.
