This is a very easy and delicious recipe that is not only a hit with the family for dinner it is a hit for left overs as well!
Ingredients:
1/2 lb of pound boneless beef sirloin steak
1 Tbsp of coconut oil
1 small red onion
1/2 cup of red pepper
1/2 cup of orange or yellow pepper
1/2 cup of green pepper
1 tomato, diced
2 tbsp salsa
1 tsp cilantro
1 tsp cumin
1tsp creole seasoning
2 cloves of garlic
1 tbsp of lime juice from a lime
Cauliflower Spanish Rice:
1 head cauliflower, cut into florets
2 tablespoon olive oil (divided)
1/2 cup red onion diced
2 cloves garlic, chopped
8 ounce can of tomatoes
6 oz can of green chilies
Directions For Steak:
In a large skillet place coconut oil, garlic, and onion until onion is translucent. Next add the steak and peppers , tomato, and let cook until steak is cooked throughout. Last throw in the cumin, cilantro, lime, cumin, and creole and continue to simmer for 10 to 15 minutes. Throw rice in a bowl and place steak mix over the rice. Last top with guacamole.
Directions for Spanish Rice:
Cook the cauliflower by steaming in a vegetable steamer or in a microwave safe bowl with 2 tablespoons of water. Microwave on high for ten minutes or until completely soft throughout. Then mash the cauliflower. In a small skillet heat 1 tbsp olive oil, tomatoes, garlic, and chilies until onions are slightly browned. Then add skillet mixture to the cauliflower with the remaining olive oil, canned tomatoes, and salt and pepper to taste.
