I love fun new breakfast ideas that kids will love and have fun making too. This is the a great recipe for a kids birthday, treats at school, or a fun saturday or sunday snack. I hope you enjoy eating as much as I enjoyed creating!
Ingredients:
1 cup almond or cashew flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons coconut palm sugar
2/3 cup vanilla coconut creamer
1 egg (whisked)
2 tablespoons pure maple syrup or honey
2 tablespoons melted coconut oil
1/3 cup of sprinkles
Directions:
Preheat oven to 350F. Spray a mini muffin pan with non stick cooking spray.
Combine flour, baking powder, baking soda, salt and sugar in a medium bowl. Mix together the dry ingredients.
In another small bowl, combine the coconut creamer, egg, maple syrup and melted butter just until combined.
Pour the wet ingredients into the dry ingredients. and use a mixer to blend ingredients together.
Stir in the sprinkles. and pour batter into the muffin pan about 1/2 to 3/4 full.
Let cool slightly in the pan.
*You may need to use a spoon around the edges to separate the muffins from the pan.
Serve with heated maple syrup or honey.
