I had friends over for Chili this past Saturday night and I thought a great side dish for these cold fall nights would be a sweet potato soufflé!
It was a big hit and it tastes like dessert so you have a two in one!
Ingredients:
6 sweet potatoes
1/4 to 1/3 cup of grass-fed butter
1/4 cup grade B maple syrup
1 tablespoon of cinnamon
2 teaspoons of vanilla
1 teaspoon of pumpkin spice
Directions:
Pre heat oven to 450 degrees. Bake sweet potatoes for 45 minutes to 1 hour on a foiled rack.
Remove from oven and allow to cool. Remove skins and place in an 8×8 casserole dish. Mash the potatoes with a large potato masher or mixer at low to medium speed. Next place butter, syrup, spices, vanilla, and continue to mash and/or mix until ingredients are spread throughout.
Then place back in the oven at 350 for 30-40 min or until potatoes are slightly brown on top.
