I love salads with the spring/summer weather. I also like to add a lot of variety and color to my salads. Here is one of my personal favorite recipes that I feel in love with and have it often. It is great to have with bbq’s and summer get togethers.
INGREDIENTS
2 boneless skinless chicken breasts diced
2 cups of shredded cabbage
1 1/2 cups shredded carrots
1 cup of green papaya shredded
½ cup green onions
½ cup crushed cashews
1 6 oz can of diced water chestnuts
Cilantro Dressing
2 cloves garlic
2 tablespoons gluten-free Thai peanut sauce
1 sesame oil
½ cup fresh cilantro
1 tablespoon fresh lime juice
1 tablespoon coconut oil
½ teaspoon fish sauce
1 tablespoon of apple cider vinegar
¼ cup almond butter
¼ cup water
