I have been on a baking frenzy lately. With Valentines day and special events I have been creating a lot of delicious treats and although they are delicious my husband was on sugar overload and needed me to put a halt to all the baking!
We celebrated our Valentine’s Day this past Saturday evening and I made a delicious meal with Bacon wrapped filet, twice baked sweet potatoes, and sun-dried tomato asparagus Caesar salad. I just felt like the meal needed a little something sweet to make the meal complete.
I wanted something small that was just a little sweet but not too rich or indulgent. So here is what I came up with and it was perfect.
I hope you enjoy this as much as my husband and I did.
Ingredients:
1 ripe banana
1 tbsp coconut oil
2 tsp of almond butter or sunbutter
1-2 tbsp honey (drizzled)
1/2 tsp cinnamon
Directions:
Remove the peel from the banana and slice into 1/2 inch thick slices.
Set a nonstick skillet over medium to medium high heat and add the oil and peanut butter. Let the oil melt and then add in sliced bananas.
Next drizzle the honey and cinnamon over the bananas and fry for 4-5 minutes on each side.
I allowed them to cool in the frying pan and then served them with the end of the meal so they were nice and warm.
The recipe is so easy and it will be the perfect healthy way to indulge.
