I found a similar recipe on Cheeseslave.com I have made types of eggs like this before and they were a tremendous hit for families of all ages!
You can also make a double batch, freeze what you don’t use take them out of the freezer when you are ready to use and microwave for about 45-1 min and voila – breakfast on the go!
Bacon, Egg & Cheese Muffins with Almond Flour
Makes 6 muffins.
Ingredients:
4 cage-free eggs
2 TBS bacon drippings
1/4 tsp sea salt
3 TBS Almond Flour (I get mine from Trader Joes)
1/4 tsp baking powder
8 strips nitrate-free bacon (I also get this from Trader Joes)
1/2 cup (4 oz) Raw cheddar cheese (I get this at Trader Joes)
1 clove of garlic
1/4 cup of diced red onion
3 tablespoons of sun-dried tomatoes
Grass-Fed Butter
Directions:
1. Preheat oven to 400 degrees.
2. Fry bacon in a skillet until crispy. Set aside.
3. Blend eggs, bacon drippings and salt in a mixing bowl.
4. Add Almond flour and baking powder — mix until there are no lumps.
5. Throw the bacon, onion, garlic, sund-dried, and cheese into the food processor and pulse until crumbled. Stir into batter.
6. Either grease your muffin tin with butter or olive oil or use the paper inserts.
7. Pour batter into muffin tin and bake for 15-20 minutes.
8. Serve
