Here is a fantastic lunch recipe or a great appetizer for entertaining.
They are very easy, very healthy, and taste delicious!
Ingredients:
1 small head broccoli, cut into small florets and steamed
1 tablespoon olive oil
1 teaspoon of balsamic vinaigrette
dash of salt and pepper
4 portobello mushrooms (stems removed), sliced in halves
1 red bell peppers (ribs and seeds removed), sliced 1/4 inch thick
1/4 cup olive oil mayonnaise
1/4 cup of sundried tomatoes
2 small garlic clove, crushed through a press
1 teaspoon of basil
4 parmesan cheese or raw cheddar cheese
Directions
Heat broiler, with rack set 4 inches from heat. On a rimmed baking sheet lined with aluminum foil, toss broccoli with balsamic and oil; season with salt and pepper. Broil, tossing once or twice, until broccoli begins to char, 4 to 6 minutes
Add mushrooms, tomatoes, and bell peppers to sheet; season with salt and pepper, and toss to combine. Broil, tossing once or twice, until vegetables are tender, 8 to 10 minutes more; set aside.
in a small bowl, combine mayonnaise, basil, and garlic; season with salt and pepper. Place Portobello’s on a oven safe tray and spread the mayo mixture onto the mushroom. Next top with the broccoli, tomato’s, and red pepper. Last, sprinkle the parmesan cheese on top.
Place the tray back in the oven, and broil until cheese is melted and lightly browned, 2 to 4 minutes.
Serve immediately.
