We went to our friends for dinner Saturday Night. I need to make an appetizer quickly, but wanted to impress them with my mad cooking skills (LOL). This was a tremendously easy recipe that knocked their socks off all in one.
Ingredients:
2 avocados sliced into inch pieces
1 cup of olive oil or coconut oil for frying
1/2 cup gluten free flour or coconut flour
1/2 cup of gluten free panko crumbs
2 cloves of garlic
1 egg beaten
1 tsp of creole seasoning
dash of salt and pepper
1/4 cup of salsa added to the ranch.
Directions:
- Heat oil in a large heavy skillet
- In a small bowl, mix together the flour, garlic, salt, pepper, and creole. Place the beaten egg in a shallow dish. Dip avocado slices in beaten egg, and then in the flour mixture. You may repeat the dipping process if you prefer a thicker batter. Then Top with Panko Crumbs.
- Fry the coated avocado slices in the hot oil for 3 to 5 minutes, until golden brown, turning once. Drain on paper towels, and serve hot.
