Thai Cucumber Salad Recipe
Ingredients
2 Seedless Cucumbers
2 Large Carrots
3 Green Onions
¼ cup raw cashew pieces
For the Dressing:
⅓ cup Rice Vinegar
1 teaspoon Sesame Oil
1/4 teaspoon Red Pepper Flakes
1/2 tsp of ginger
1 Tablespoons raw Honey
1 clove of garlic
Directions
Spiralize the cucumbers. Cut the carrots into thin strips. Thinly slice the green onions and add cashew pieces
Mix the dressing ingredients together in a small bowl, and stir until combined evenly.
Add the chopped vegetables to a large salad bowl.
Pour the dressing over top and toss to combine.
