This is such an amazing recipe, that is delicious, light, and so filling. I buy the pre made zucchini noodles (a lot less time) and they give an amazing flavor with the shrimp.
Ingredients:
- 1/2 medium onion, diced
- 1 Tbsp of olive oil
- 5 T salted butter
- 2 tsp. crushed garlic
- 1½ tsp. black pepper
- 1 can of full fat coconut milk
- 1 cup coconut creamer
- ¾ cup grated parmesan cheese or vegan parmesan
- 1 tsp of parsley
- 1 tsp of italian seasoning
- Prepared zoodles for serving
Directions:
- Heat the olive oil in a pan over medium-low heat. Add the onions and sauté for 4-5 minutes. Add the garlic and cook for an additional minute.
- Mix in the coconut cream, shrimp, and butter. Simmer for 6-7 minutes. Reduce the cream mixture to simmer and add the herbs and salt. Cook on low for about 15-20 minutes, until the sauce reduces by half. Top with parmesan cheese and stir until melted.
- When the sauce is reduced, remove from heat. Spoon over zucchini noodles to serve.
