This is a fan favorite. It tastes delicious and is so good left over for lunch or dinner the following few days!
Ingredients:
4 cups shredded cooked chicken breast (about 1 pound) (I used Rotisserie Chicken)
8 ounces of Dayia or Full Fat Cream Cheese
1/2 cup of Primal or Just mayo
6 oz can of diced green chiles
15 oz can of artichokes
2 cloves of garlic
1/2 cup of Parmesan cheese (optional)
1 tsp of creole seasoning
Directions:
Preheat Oven to 350. In a 9×9 casserole dish place cooked chicken or rotisserie in the pan. In a medium bowl mix cream cheese, mayo, diced chilies, artichokes, garlic, and creole seasoning. Then pour over the chicken and top with parmesan cheese. Bake for 25-30 minutes or until lightly browned and bubbling on top.
Let cool for ten minutes and then serve over cauliflower rice, or potatoes, or corn tortilla chips.
