It’s Taco Tuesday and this recipe is not only simple it’s refreshing and delicious in these hot summer months! It is also great for leftovers too! It has so much flavor but not spicy or heavy. This recipe will definitely be saved for many Taco Tuesday Nights to come!
Ingredients:
1 -2 lbs. boneless, skinless chicken breasts, cut into chunks or strips (depending if you want leftover
¼ c. olive oil or coconut oil
1 lime, juiced
1 avocado diced
1/2 cup of red onion diced
1 t. ground black pepper
1 cup of diced green pepper
2 cloves garlic, minced
½ cup fresh cilantro, chopped
Large pieces of romain lettuce boats
Directions:
In a large skillet place oil, onion, garlic, and chicken in a skillet on medium – high, and let cook until chicken is cooked without any pink in the middle. Next add green onion, pepper, lime, and cilantro on medium to low for another 5 minutes. Serve on top of lettuce boats. Top with diced avocado.
