Ingredients:
2 Tbsp of olive oil
1 Package of sliced mushrooms
2 cloves of garlic minced
2 lbs of spinach or 1 bag
1/2 cup of diced onion
1 Tbsp of Balsamic Vinegrette
1/4 tsp salt
1/4 pepper
*optional 1/4 cup of grated parmesan cheese
Directions:
Heat oil and balsamic in large skillet on medium-high heat. Add mushrooms, onions, and garlic; cook and stir until mushrooms and onions are tender.
Add spinach; cook and stir on medium heat 4 to 5 min. or until spinach is wilted but still bright green.
Stirin salt and pepper; sprinkle with Parmesan if you want added taste.
*This recipe goes really well with grilled chicken breast or steak.
