During the holidays, I love bite size snacks that are tasty but can keep me on the track with my Holiday goals! Here is a fun and easy recipe to make that you can have for breakfast, snacks, or after dinner treat!
Ingredients
1 3/4 cups gluten-free flour
1/4 cup almond flour
1 scoop protein powder
2 T coconut palm sugar
1/4 tsp nutmeg
1/2 tsp of cinnamon
1/4 cup cashew butter
1/4 cup honey
1/4 cup Almond Milk EggNog
Directions:
- In a large mixing bowl, combine the flour, sugar, nutmeg, cinnamon and mix well.
- In a microwave safe bowl heat your nut butter and honey until combined.
- Pour your honey butter mixture to the dry mixture and mix until combined thoroughly
- Add the Almond Eggnog until a thick batter is formed- If batter is too thin, add a little more coconut flour.
- If you want to dust with a little gingerbread sugar topping, in a small bowl place 2 tablespoons of sugar and a 1/4 tsp of nutmeg, cinnamon and a dash of clove
- With Your hands form dough into 1 inch bite sized balls. Roll balls and place in small bowl to coat with gingerbread topping. Place on a baking sheet lined with wax paper.
- Refrigerate for 30 minutes to firm up or for a quicker process stick in the freezer for 10.
