I wanted to make a healthy treat for the Labor Day weekend.
Now that Fall is just around the corner that blissful word “Pumpkin” is popping up all over.
So here is my glorious creation …
Ingredients:
1 cup of unsweetened pumpkin puree (not pie filling)
¼ cup unsweetened natural cocoa powder
1/2 scoop of chocolate or vanilla protein powder (vegan or whey)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¾ cup of vanilla coconut creamer or regular coconut creamer
1 tsp of raw honey
Directions:
- In a blender (I used a ninja) or food processor, combine the pumpkin, cocoa powder, protein powder, vanilla and cinnamon until well blended and smooth. Using a rubber scraper, scrape the sides of the blender.
- Add half of the creamer to the blender or processor; process until smooth, then scrape down sides, Add remaining milk; process until smooth. Taste the pudding and add the honey.
- Scrape into individual jars or ramekins. Cover and chill at least 30 minutes or till it is thick and pudding like.
