I was at the lake this weekend and one of my favorite things to do there is bake! I love the kitchen. It faces the beautiful water and it is so calming and gets the creative juices flowing. Here is one I made and actually took a loaf over to the neighbors. So you can have a delicious treat and give a gift all in one!
Ingredients:
3 medium ripe bananas
2 large eggs
1/3 cup of melted grass-fed butter or coconut oil
1 1/2 cup almond flour
1/4 cup of vanilla coconut creamer or unsweetened vanilla almond or coconut milk
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon of cinnamon
1/4 to 1/2 cup of macadamia nut pieces
Directions:
Preheat oven to 350 and line a 9×5 loaf pan with parchment paper. Set aside.
In a medium mixing bowl, mash the ripe banana with a fork until completely mashed. Next add almond flour and protein powder to the bowl; stir.
Next add salt, cinnamon, baking powder, melted butter/coconut oil, and eggs. Stir until ingredients are mixed throughout.
Last add the nuts (you can omit or add your favorite nut like walnuts, pecans etc…). Stir for 1 to 2 minutes or mix on medium to high.
Pour Mix into loaf pan and bake for 45 to 55 minutes. Insert a toothpick in the center, it’s done when it comes out clean.
Store any leftovers covered in the fridge and as always Enjoy!
