Cherry’s are such good antioxidant super foods and Peaches are also great for your skin, eye care, lowers cholesterol and much more. So I combined the two to make the perfect Sunday Night treat.
Ingredients:
2 peaches skinned and sliced
1 Tbsp of coconut oil
1/3 cup of organic tart cherry juice
1/2 cup of almond flour
2 tablespoons of raw honey
2 tsp of cinnamon
1/4 cup of coconut palm sugar
1 tablespoon of vanilla coconut creamer or unsweetened vanilla almond or coconut milk
1/4 cup of raw pecan pieces
Directions:
In a medium skillet, place coconut oil and allow to melt over medium to high heat.
Next add peaches and cherry juice and turn to medium heat and allow to cook for 2 to 3 minutes.
Add the almond flour and coconut palm sugar. Top with raw pecans and cinnamon.
Last pour the coconut creamer over the top and mix and stir.
Let cook for another 5-8 minutes or until the ingredients look like “cobbler” (if the consistency isn’t cobbler like add more almond flour). If it’s too thick add a dash of coconut creamer/milk.
Serve in a bowl and I placed Vanilla Cashew Milk Ice Cream over the top of the cobbler.
