We got hit with a HUGE snow storm this weekend and got stuck in the house for two days. So instead of sulking I went to baking!
Here is a great recipe that is super simple and fun to make.
Ingredients:
1 cup creamy almond butter
⅔ cup coconut sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon baking soda
½ cup dark cacao chocolate chips
Directions:
- Preheat oven to 350°F. Line two large baking sheets with parchment paper.
- In a large mixing bowl, add the almond butter, coconut sugar, egg, vanilla extract, and baking soda and mix together until well mixed. Add in the chocolate chips and continue mixing until fully combined.
- Place a spoon full of dough and roll it into 1 1/2 inch sized balls of cookie dough and place onto the prepared baking sheets (I like 3 in a row).
- Bake at 350°F for 9-11 minutes or until the cookies are set and not runny in the middle.
- Remove from the oven and allow the cookies to cool completely on the baking sheet
