My followers all know I have a love for Taco Tuesday. Here is a great recipe that is delicious and perfect for family night, party night, or anytime you want a delicious snack to munch on.
I love to partner this with Sweet Potato chips, veggies, or bake sweet potato rounds. But Beware it’s really hard to stop eating and you might need an intervention!
Ingredients:
1/2 lb chorizo sausage
2 sausages
2 Tbsp of coconut or avocado oil
1/2 small onion minced
1 small jalapeño diced
1/4 tsp cumin
1 cup coconut creamer
1/2 lb raw cheddar cheese
4 oz cotija cheese
1 Tbsp coconut or almond flour
1 tsp of chili powder
1/4 tsp cumin
Directions:
Take the sausage out of the skin and break it apart as much as possible.
Heat a little bit of avocado or coconut oil in a medium pan, over medium heat.
Add diced onion, jalapeno and sausage. Cook, mixing clumps of chorizo as much as possible.
Add cumin and chili powder, mix well, cook until all done.
Add heavy cream and stir well.
When heavy cream is heated through add cheeses and stir slowly while the cheese is melted and all smooth.
Transfer queso into a serving dish and top with tortilla chips and cilantro.
