This is delicious and the perfect Compliment to Your Taco Tuesday Theme!
Ingredients:
4 pieces of salmon
1 tbs coconut oil
1 tsp ground cumin
1 tsp creole seasoning
2 cloves of garlic
1/2 tsp chili powder
For the Avocado salsa:
2 ripe avocados, sliced
1/2 cup of diced grape tomatoes
1/2 small red onion diced
Juice from 2 limes
1-2 tbs finely chopped cilantro (depending on how big of a cilantro lover you are)
dash of garlic Salt
Directions for Salsa:
Combine the tomatoes, mash avocados, onion, cilantro, lime juice, and garlic salt in a medium bowl
and mix until it has chunky yet creamy guacamole consistency.
Directions:
Mix the spices together in a bowl and rub the salmon fillets with coconut oil and this seasoning mix.
Pre-heat the grill.
Grill the salmon to desired doneness. (I grilled for about 5 minutes)
Top with avocado salsa.
