I made this delicious dish for my grandmother for Mother’s Day and boy was it a hit. It was delicious but also not too rich. I love spinach and artichoke dip, so I thought it would be fun to combine the two and make it a dinner delight.
Ingredients:
6- 8 chicken breasts
1 package of frozen spinach
1 can of artichokes (drained and sliced)
3 Roma tomatoes (diced)
1/2 cup of pesto
3 cloves of garlic
1 teaspoon of thyme
1 teaspoon of basil
1 teaspoon of sage
1/2 cup of olive oil
1/2 cup of grass-fed butter
1/2 cup of parmesan cheese
1 cup of fresh shredded mozzarella
Directions:
- Preheat the oven to 375F
- Place chicken flat in the bottom of a 9×9 baking dish.
- Top with spinach, artichokes and tomatoes
- In a medium bowl mix olive oil, pesto, butter (melted), sage, thyme, basil, and garlic together.
- Then Pour olive oil mixture over the chicken, artichokes, spinach, and tomatoes.
- Then sprinkle the parmesan and mozzarella cheese over the top.
- Bake 30-45 minutes or until the chicken has no pink in the middle.
*You can top over Spaghetti squash, Butternut Squash, red potatoes, or even zucchini noodles.
