Ingredients;
½ cup mashed sweet potato
2 eggs (whisked)
2 tablespoons of coconut oil (for cooking)
¾ teaspoon ground cinnamon
pinch of ground ginger
pinch of allspice
Topping Options:
almond butter and banana
bacon
unsweetened shredded coconut flakes
Grade B maple syrup
honey
Directions:
In a medium mixing bowl place mashed potatoes, whisked eggs, and spices. Mix with a large spoon.
In a medium to large skillet heat coconut oil on medium to high heat. Drop the sweet potato mixture by the tablespoon and cook for 3-5 minutes.Flip and cook for an additional 3-5 minutes, until lightly golden brown.
