I am always looking for good weekend brunch type menu items for the weekend, or something to throw in the mix so I don’t get tired of the same mundane breakfast each morning. Here is a great one that leaves you with all the ingredients to have your morning start off on the right foot!
Ingredients
10 large eggs
1/2 cup of grass-fed butter
1/2 teaspoon of chili powder
1 cup of parmesan cheese
3 cloves of garlic
1 pound boiled or baked deli ham, chopped
1/2 cup scallions, chopped (1/2 cup)
a few fresh sage leaves
Directions:
Butter a 9×13 baking dish Place 1/2 of the ham on the bottom portion of the dish and add 1/2 the scallions and cheese. Then place the next 1/2 lb of ham and top with remaining scallions and cheese.
In a large bowl, whisk together the eggs, milk, coconut creamer, mustard, chili powder, and garlic.
Next Pour the egg mixture over the ham. Top with sage leaves.
Preheat the oven to 350 degrees. Bake the strata, uncovered, until puffed and lightly golden brown, about 35 -45 minutes. Let cool for about 10 minutes before serving.
