This is a great “comfort food” recipe and it is very simple to make. I made these and paired it with steak and have paired with chicken as well.
Ingredients
2 cups potatoes mashed
3 large eggs, beaten
2 tablespoons of coconut creamer or full fat coconut milk
coconut oil
1/4 cup diced green onion
1/4 cup diced bacon cooked
1/4 cup Parmesan cheese
1 clove of garlic
1 tablespoon of jalapeño peppers
Salt and freshly ground pepper
Directions:
Heat oven to 350 degrees. Grease a mini muffin pan really well with coconut oil.
Whisk together the mashed potatoes,garlic, creamer, peppers, eggs, jalapeño, and bacon. Season if necessary, depending on the seasoning of the original mashed potatoes.
Spoon the mixture into the prepared muffin pans. Sprinkle the tops with Parmesan cheese and green onion; bake in oven for 20 minutes, or until the tops are golden brown.
Allow to cool in the pan for 5 minutes, and gently release with a spoon or knife.
