Most people say the hardest part about going paleo is giving pizza, well now you don’t have to! This recipe is delicious and gives you that pizza taste you yearn for!
Ingredients:
Crust:
1 Cup almond flour
1/4 Cup olive oil
1/4 tsp baking soda
1/4 tsp sea salt
filling:
1 Tbsp of Coconut oil
8 eggs
1 package of sun-dried tomato sausage
1/2 cup of coconut or almond milk
1 onion, diced
1 cup of chopped broccoli
1 cup of chopped cauliflower
black olives
1 sweet potato cooked and diced
2 – 3 cloves of garlic
dash of pepper
1/4 tsp of fennel seed
1/4 tsp dried oregano
Directions:
1) Set the oven to 375 degrees.
In a mixing bowl combine crust ingredients and mix throughout. Press into the bottom of a round casserole dish and bake for 10 minutes or until slightly brown and set a side.
In a medium skillet combine coconut oil, sausage, garlic, and onion and cook until sausage is cooked and onion is translucent.
Next add broccoli, cauliflower, spinach, oregano, fennel, and potato. Saute 10 to 15 minutes until it is slightly bubbling (you might have to turn down to low or medium low).
In a large bowl whisk the eggs and milk and then pour skillet mixture and continue to stir.
Add a handful of black olives and pour over the crust.
Pour into casserole dish over the crust.
Bake for 30 minutes, or until just set in the middle ( you might have to cut through the middle 15 minutes to 20 minutes in.
Let them cool for 15 minutes before serving.
