With the super bowl parties yesterday, I saw all the god-awful food that people were consuming. Now for those of you that know me, my favorite thing to do is turn something that is “bad” for you and turn it into a Paleo version that is much more beneficial!
I saw some pork slider with these nasty white buns and had a vision. What if you took the buns off and replaced them with sweet potato? Now you have a perfectly paleo dish that tastes ten times better than the alternative anyways.
Heres to another addition of “Paleo That Fit Chic LA”:
Paleo Pork Sliders with Sweet Potato Buns:
Ingredients for the pork:
4-5 lb pork butt roast
1 red onion, sliced
3-4 cloves of garlic
3 tablespoons of coconut oil or grass-fed butter
Dry Rub
3 tbsps chili powder
1 tsp coriander
2 tsps cumin
2 tsps onion powder
1 teaspoon of creole seasoning
2 tsps sea salt
Mix all dry rub ingredients together. Rub the entire roast with the dry rub. Place a layer of onions and garlic on the bottom of your slow cooker. Next Place the roast and top with oil or butter and put the rest of the sliced onions on top of the slow cooker. Cook the roast on high for 4-6 hours and then turn down to low until the roast is literally falling apart and shredded.
Sweet Potato Waffle Buns:
Ingredients:
3/4 cup of cooked sweet potato
2 eggs
3 tablespoon raw honey
1 tablespoon vanilla extract
1 ½ cups almond flour
½ teaspoon sea salt
½ teaspoon baking soda
Directions:
1. In a medium bowl, mash the cooked sweet potato with a whisk until it soft like a puree. Add the two eggs and continue to whisk until blended. 2. Add the honey and vanilla to the egg mixture. 3. With a large spoon or rubber spatula, add almond flour, sea salt, and baking soda. Mix well. 4. Let the batter rest for about 10-20 minutes, it will thicken up and the baking soda will have time to do its magic. 5. In a preheated waffle iron, add about half the mixture. 6. Follow your waffle makers instructions for cooking time.
Place pulled pork into the sweet potato waffle bun.
*For added deliciousness top with candied pecans.
