I am always looking for delicious side dishes to compliment your meat. Here is a great recipe that is not only delicious, but very simple to make too.
Ingredients:
2 T olive oil
1 tablespoon of balsamic vinaigrette
1/2 cup chopped onions
1 tsp thyme
1/4 tsp. ground black pepper
2 garlic clove (minced)
3 medium yellow squash, sliced into 1 inch thin rounds
3 medium zucchini, sliced into 1 inch thin rounds
2 large eggs
1/4 cup coconut creamer
1/2 cup almond flour
1/2 cup toasted pine nuts
2 tablespoons of pesto
1 15oz can of diced Italian tomatoes
Directions:
Preheat the oven to 350 degrees.
Heat the olive oil in a large skillet on medium-high.
Add the onions, garlic, pepper, thyme and cook until onions are slightly browned and soft.
Add squash, zucchini, balsamic, and cook until veggies are brown and tender. Next add the pesto and tomatoes and let simmer for 15 – 20 minutes.
Remove from heat. Transfer the squash to a baking dish.
Whisk eggs and coconut milk together.
Pour the mixture over the squash/onions in baking dish. Using a spoon, gently shift the squash around so the egg mixture is evenly distributed. Mix in almond flour evenly.
Bake for about 20-25 minutes. Sprinkle pine nuts on top and bake for another 5 minutes.
