I am at the lake getting reinspired in the kitchen! I have been making a lot of new recipes and really experimenting with different food creations.
I challenged myself tonight to open up the kitchen cabinets pull out ingredients that I found enticing and create something sweet and here is what I came up with:
Chocolate Cream Cheese Brownies:
Ingredients:
1 stick of grass-fed butter
5 ounces of unsweetened dark cacoa chocolate ( I use 70% or more)
1/2 cup of unsweetened cocoa powder
2 eggs
1/4 cup of raw honey
1/4 cup of grade B maple syrup
2 teaspoons vanilla
1 cup of almond flour
1/4 teaspoon salt
a splash of vanilla coconut creamer
1/3 cup palm sugar
1/8 teas of salt
1 large egg
2 teaspoons vanilla
1 teaspoon of cinnamon
1/2 cup of melted dark chocolate
Directions:
Preheat oven to 350. Grease an 8×8 baking pan.
In small sauce pan over medium heat, or in the microwave, melt chocolate and butter until smooth. Once melted remove immediately from the heat.
In a separate bowl, beat eggs, vanilla with the maple syrup, and honey. Slowly add in chocolate mixture until well combined.
In small bowl, sift together cocoa, salt and flour. Add mixture to rest of brownie mix.
Pour batter into 8×8 baking pan.
Grab a mixing bowl and combine all of the cream cheese ingredients and beat with a mixer until smooth throughout.
Pour mixture over the brownies and if desired use a knife to create swirls throughout the mixture.
Bake 30 to 35 minutes or until cooked throughout. (I stick a toothpick in the middle to see if it is done). Turn off the oven and remove from the oven and top with the melted chocolate. Place it back into the oven until the chocolate chips completely melt onto the brownies.
Remove from the oven and allow brownies to cool.
