I made these for Super Bowl Sunday and they were a HUGE hit!!!
Ingredients:
8 small sweet potatoes
1 tablespoon of butter (divided)
1 cup of Salsa
*Optional Raw Cheese found at Trader Joes (8 thin slices cut in 1/2)
and Jalapanos.
Directions:
Preheat Oven to 400 degrees. Place all of the sweet potatoes on a baking sheet put two puncture marks into the potato, bake 30 to 40 minutes.
Remove from oven and allow to cool for 15 minutes.
Slice potatoes into halves and use a butter knife and lightly marinate the potatoes.
Then place a spoonful of guacamole and spread over potato. Then take a spoonful of salsa and place on top of guacamole.
*If you are using the cheese, place on top of sweet potato after you have lightly buttered it.
Place back in the oven at a warming temperature for 5-10 minutes or until cheese is melted or potatoes are warmed throughout.
