No-Bake Peanut Butter Pie
Ingredients:
1 cup almond butter or sun butter
3 medium bananas mashed with a fork
2 tsp pure vanilla extract
1/2 tsp of baking powder
1/4 cup coconut oil (melted)
3 tbsp of grade B maple syrup
1 scoop of vanilla or chocolate whey protein powder
Directions:
Mix all ingredients in a medium bowl.
Pour into a prepared pie crust and freeze until firm. (You can also make this without crust and its delicious as well).
Pie should be kept cold; Keep it in the freezer. Just thaw before eating, so you can get that “mousse” texture.
Chocolate Pie Crust:
2 tbsp unsweetened cocoa powder
1/2 cup raw cashews
1/2 cup shredded coconut (unsweetened)
1/8 tsp cinnamon
1/2 cup of chopped pitted dates
Directions:
In a food processor combine raw cashews, dates, coconut, cocoa, and cinnamon. I added just a splash of unsweetened hazelnut coconut creamer. Blend until crust like.
Next place in the bottom of a 8 inch pie pan lined with parchment paper.
Press crust into the pan until evenly distributed. Place in the fridge and chill until you are ready to pour the filling in it.
*For added deliciousness top with melted dark cacao chocolate chips by drizzling it over the top of the pie.
