Here is a great chicken recipe that will leave you and your family very satisfied!
Ingredients:
1.5 lb of chicken breasts
1/4 cup of lime juice
3 Tablespoons of melted coconut oil
1 Tablespoon of grass-fed butter
1 Tablespoon of Dijon mustard
1 teaspoon of Worcestershire sauce
1 Tablespoon of gluten-free Thai Peanut Sauce
1/3 cup of chopped onion
2 cloves of garlic
1 Tablespoon of basil
dash of pepper
2 Tablespoons of cilantro
Combine 1/8 cup lime, coconut oil, melted butter, mustard, Worcestershire, Thai peanut sauce, onions, garlic cloves, and pepper; mix well.
Cut chicken into even cutlets and place in a gallon sized storage bag.
Pour marinade over the chicken and marinate in the fridge for an hour.
Preheat grill.
Place chicken on grill and grill for 7 minutes.
Then flip and cook until chicken is cooked throughout
Remove from grill
Meanwhile combine remaining lime juice, 1 tablespoon of melted coconut oil, 2 minced garlic cloves, cilantro, and basil.
Slice chicken into bite-sized pieces and pour sauce over top.
