I came up with this recipe last night, when I was trying to find a good complement to go with my pesto meatballs and marina sauce.
It was such a hit with the whole family I made it for ages from 3-43! This is a great snack, salad topper, or side dish.
Ingredients:
3 zucchini – sliced into 1’inch quarter slices
1/4 cup of olive oil
1 tablespoon of garlic
1 teaspoon of salt
1/4 cup of shredded parmesan cheese (omit if on the whole 30)
Directions:
1. Pre-Heat oven to 375
2. Place zucchini slices in a ziploc bag add olive oil, garlic powder,and salt. Shake the bag till the zucchini is dredged in the olive oil mix.
3. Next lay the zucchini flat onto a baking sheet (make sure they are spread out evenly).
4. Then top with Parmesan cheese and place in the oven for 45 minutes.
5. Let cool for 10 minutes
