INGREDIENTS:
1 tablespoon of coconut oil
2 turkey sausage (or regular) links diced
1 small jalapeno, thinly sliced and seeded
1/2 cup diced red onion
1 clove garlic, minced
1/4 cup of salsa
6 egg whites or eggs whisked
1 avocado diced
chopped cilantro to taste
DIRECTIONS:
Heat oil in a medium saute pan over medium-high heat. Add jalapeño turkey, and onion and saute for 3 minutes, or until onions are translucent. Add the garlic and tomato and continue sauteing for 2 to 3 minutes, stirring occasionally. Remove from heat and transfer the mixture to a bowl.
Return pan to the stove, and reduce heat to medium*. Add the egg whites and cook for 3-5 minutes until the eggs not stirring allowing egg to cover the pan. Remove from heat. Place egg or egg white on a plate and add onion jalapeño mixture. Fold top of the omelet over onion mixture and top with salsa, avocado, and cilantro.
