Ingredients:
2 cups almond flour
1 cup shredded coconut
1 heaping scoop of vanilla whey protein powder
2 teaspoons of baking soda
1 teaspoon of salt
2 sticks of grass-fed butter (room temperature)
1 1/2 cups of palm sugar
1/2 cup of honey
2 large eggs
2 teaspoons of vanilla extract
12 ounces of dark cacao chocolate chips
8 ounces of dried unsweetened cherries.
Directions:
Preheat oven to 375
In a large mixing bowl place flour, coconut, whey, baking soda, and salt.
In a separate bowl, beat butter, sugar, honey, add eggs (1 at a time), and vanilla.
Add egg mixture to the flour mixture and beat with a mixer on medium speed for two minutes or until dough is smooth throughout. Last add chocolate chips and cherries and mix together till separated.
Refrigerate dough for an hour.
Roll dough into 2 inch balls and place on cookie sheet. Bake for 12 to 14 minutes and place on wax paper to cool.
