Ingredients
¾ cup full fat canned coconut milk
1/3 cup of unsweetened shredded coconut
1/4 cup of almond flour
1 teaspoon vanilla extract
1 Tbsp of flax seed
1/4 cup of chopped pecans
1/2 tsp of cinnamon
1/2 tsp of pumpkin spice
1/8 tsp of nutmeg
3 tbsp of dried cranberries (or raisins)
1 tbsp of honey
Directions:
Heat milk in microwavable safe bowl for 2 minutes. Add almond flour, cinnamon, pumpkin spice, nutmeg, flax, and vanilla; stir. Cook for 1 minute.
Stir in coconut flakes, cranberries, and pecans.
Drizzle honey on top and maybe a little more cinnamon for some extra spice!
