This past weekend we attended a Peach Festival in Sioux Falls. They had varieties of various peach items. Peach cobbler, fresh peaches, peach ice cream, they even had peach beer.
With all the peaches in my view it made me want to create this simple treat that will leave you feeling peachy!
Ingredients
4 ripe medium to large peaches, quartered and pitted
1 teaspoon vanilla extract
1 can of full fat coconut milk (cold)
1/4 cup honey
1 teaspoon ground cinnamon
1/4 cup of raw pecans
1/8 cup of unsweetened shredded coconut
Directions
Preheat oven to 400 degrees.
Lightly grease cookie sheet with olive oil or coconut oil cooking spray.
In a small bowl, mix together the vanilla and cinnamon. Toss the peach wedges in the marinade to coat well. Place peaches on the cooking sheet and roast for 20 minutes or until pears are tender and golden.
In a medium bowl mix the honey, pecans, and coconut milk. Then pour on the peach wedges and top with coconut.
